Crab-Stuffed Mushrooms


 
Ingredients Preparation
  • Produce
    Green onions (1/2 cup)
    Parsley, fresh leaves (1/2 cup)
    Portobello mushroom caps (2)
  • Seafood
    Crabmeat (1 cup)
  • Cooking & Baking
    House seasoning (1)
    Nonstick cooking spray (1)
  • Bread & Baked Goods
    Bread crumbs (1/2 cup)
  • Dairy
    Cream cheese (1/2 cup)
    Parmesan (4 tablespoons)

    1 Preheat the oven to 375 degrees F.

     

    2 Combine the crabmeat, cream cheese, parsley, green onions and Parmesan. Season with House Seasoning, to taste. Stuff the mushroom caps with the mixture and top with bread crumbs. Spray the tops with nonstick spray to help them brown. Transfer to the oven and bake for about 20 minutes, or until the filling is hot and melted.

     

    House Seasoning:

    1 cup salt

    1/4 cup black pepper

    1/4 cup garlic powder

    Mix ingredients together and store in an airtight container for up to 6 months.

Crab Cakes

  • Produce
    Bell pepper (1/2 cup)
    Garlic powder (1/4 teaspoon)
    Green onions (3)
    Lemon (1/2)
  • Seafood
    Crabmeat (1 pound)
  • Cooking & Baking
    Cayenne pepper (1 Dash)
    Flour (1)
    Peanut oil (1/2 cup)
    Salt (1 teaspoon)
  • Snacks
    Crackers (1/3 cup)
  • Condiments
    Favorite dipping sauce (1)
    Mayonnaise (1/4 cup)
    Mustard, dry (1 teaspoon)
    Worcestershire sauce (1 teaspoon)
  • Dairy
    Egg (1)

    1 In a large bowl, mix together all ingredients, except for the flour and peanut oil. Shape into patties and dust with flour.

     

    2 Heat oil in a large skillet over medium heat. When oil is hot, carefully place crab cakes, in batches, in pan and fry until browned, about 4 to 5 minutes. Carefully flip crab cakes and fry on other side until golden brown, about 4 minutes. Serve warm with preferred sauce.
